Pulled pork jokes never get old.
Let me begin by saying that I would rather have used almost any other pulled pork-themed quote than the one I chose. Unfortunately, that’s the only one I could find. That being said, I made pulled pork this week! I knew I wanted to make something with pork (the meatballs did have pork, but it was ground and didn’t really count), but I couldn’t think of many popular pork dishes that could be turned, fairly easily, into a vegetarian dish. Eventually I decided to either make pulled pork or sausage and peppers. Obviously, I chose the former, but sausage and peppers will most likely make an appearance at a later date because I already have a sausage quote on the back burner. Also, it’s delicious, but I digress.

Armed with a pot of homemade tomato sauce and a variety of recipes, I decided to tackle meatballs (and lentilballs). Fortunately, I made my sauce the day before because this took a long time. For the meatballs, I used Martha Stewart’s recipe; apparently my mother’s preferred meatball recipe was accidentally sold during a yard sale, but this one seemed similar. I scoured the internet for vegetarian meatball recipes and found a lot of options. I wanted to try one that used something other than a meat-alternative as a base, and many of the recipes I found called for either mushrooms or lentils. I chose to go with a lentil-based recipe from Sprouted Kitchen.

“In prison, dinner was always a big thing. We had a pasta course, then we had a meat or a fish. Paul was doing a year for contempt and had a wonderful system for garlic. He used a razor and sliced it so thin it would liquefy in the pan with a little oil. It’s a very good system. Vinnie was in charge of the tomato sauce.”

Following an extremely easy cooking experience, I decided to try something a little more challenging this week. While it was ultimately rewarding, it was a lot of work. To avoid a super long post, I’ve decided to separate this recipe into two parts: tomato sauce and meatballs (with spaghetti, of course).

I should preface this “recipe” by reminding readers that this is less a blog where I learn how to make fancy meals and more a place where I focus on cooking things properly. That being said, this week I made BLTS, which is ridiculous because the recipe is essentially in the name and it hardly constitutes cooking, but I needed to know that I could cook bacon well before I went any further down the meat cooking rabbit hole.
